The first filling of Speyburn Single Malt Scotch Whisky coincided with the year of Queen Victoria’s Diamond Jubilee. To be certain that it was made for the Jubilee, men worked through the night in a heavy snowstorm and managed to produce one single barrel. Speyburn continues to use traditional distillation methods that created the single barrel of the 1897 vintage. Often described as the most photographed distillery, Speyburn is situated in one of the most beautiful areas of Scotland which is renowned for its outdoors. Speyburn is distilled in the famous Speyside region of the Scottish Highlands using the fresh clear waters of the Granty Burn. The Granty Burn is connected to the River Spey, which is known for its world-class salmon fishing and the invention of the Spey casting method.

Caroline Porsiel is a master distiller and liqueurist based in East Ellijay, Georgia. She founded House of Applejay, a fine spirits and liqueur distillery, in 2022 with her mother, Sabine, crafting award-winning products like Applejay from Ellijay, Mt. Frozen Knob Vodka, and Winter Cherry Mountain Liqueur. The distillery won a 2024 Best of Georgia Award and a 2025 Double Gold Medal at the San Francisco World Spirits Competition for its Winter Cherry Mountain Liqueur. As a founding member of the AMBRU Campaign, launched in 2020, Porsiel advocates for the global recognition of American Brandy and Rum. She continues to drive innovation in the craft spirits industry from her active distillery in the heart of Georgia’s apple country.
