We established Holcombe Distilling in 2015 with the aim to create a family-owned independent distillery that creates high quality gins, and pushes the gin flavour boundaries. We bought a farm in the small Victorian town of Barfold, located 15 minutes outside of Kyneton. It’s beautiful grazing country with rolling hills, large mobs of kangaroos, and plenty of cockatoos and kookaburras patrolling the sky. The region is home to some of Victoria’s best food and wine, and we are proud to be part of a community that is passionate about the things they create. Our gin, and all of our production, is hand-batch distilled and non-chill filtered – because we believe that taste is everything!
