In 1875, Johann Simon took over the Köbel property on the market square in Lauf, which was equipped with the right to brew, butcher and brandy. He concentrated on brewing beer, which already had a long tradition here due to the communal brewing typical of Lauf. In the years that followed, his son Georg and grandson Karl Simon successfully continued the business.
In 1930 the growing brewery was relocated from the cramped premises on the market square to Heroldstrasse on Urlas. It was brewed in one of the local brewhouses in Lauf until 1957, when the company built its own brewhouse. The manual art of brewing in a private brewery was then and till is in the foreground and the Simon beer specialties found many friends.
True to the motto “quality before quantity”, only 3 types of beer are brewed all year round: “Simon Weißbier”, “Simon Spezial” and “Simon Hell”, as well as “Schwarze Kuni”, a dark, strong wheat beer, seasonally in the winter.
