No more clean pale ale made with a single yeast, well maybe some from time to time, but now we’re off on a discovery of the wild yeasts and bacteria which were part of the flavour profile for millenia. Welcome back live and wild, bye bye filtered, pasteurised, and cardboardised.
Some projects are big budget, others are low budget, this started as no budget. The first batches were brewed before Spring 2013 at the Hornbeam Cafe, Hoe Street, Walthamstow. Later production moved to the Blackhorse Workshop, Blackhorse Lane, Walthamstow where we produced over a hundred brews. Now we are brewing a few batches in Bermondsey but look forward to moving production to the Brecon Beacons.
