Eric always had a love for high quality spirits, and was amazed that liquor manufacturers had to age their products in barrels for 10, 15 or more years before being able to see their finished product. With such a long time to let your product age, how could anyone have a chance in starting their own distillery?
But then Eric read an article about how microdistilleries can make just as good of a product (if not better) in a fraction of the time and he knew he was hooked.
After a long journey of an exhausting amount of research and development, Elm City Distillery LLC was formed and the task of becoming licensed by the state and federal government started.
